A bit of a long shot, but my friend'smum used to make lovely apple cookies, but she hasn't baked since her husband died a few years ago, and cant find the recipe. I have scoured the internet, but not seen anything similar :( so I wondered if anyone out there has an "old family recipe" to share??

My O/h has Coeliacs Disease (wheat/gluten allergy) so I have to bake everything at home rather than buy stuff, and I wanted to try my hand at some different biscuits, as gluten free flour is a bit limiting - the end product is either very fragile, or goes soggy incredibly quick. Recipes that dont rely on flour and egg as binding agents seem to work best, and the apple cookies had a lot of grated apple in and only a small amount of flour.. :?

Don't have any old family recipes but did find a couple that might work:

Mainly uses Oatmeal so the flour substitution might work...

and this is similar with only a small amount of flour:

Fresh Apple Cookies
Apples just seem made for brown sugar and butter. With a combination this good, you won't need much else, save for time to enjoy.

Ingredients
1/2 cup butter (1 stick)
2 cups packed brown sugar
2 tablespoons flour
1 cup peeled, grated tart apple (e.g. Granny Smith)
1/2 teaspoon ground cinnamon
3 cups quick-cooking oats, uncooked
2/3 cup chopped walnuts or pecans
1 teaspoon vanilla extract

Directions
Line cookie sheets with wax paper.

In a medium saucepan melt the butter over medium heat. Add the brown sugar, flour, grated apple, and cinnamon. Bring mixture to a boil; boil 1 minute. Remove from heat and immediately add the oats, nuts, and vanilla, mixing until well blended.

Working quickly, drop by heaping teaspoonfuls onto wax-paper-lined sheets. Loosely cover with plastic wrap and refrigerate at least 1 hour until firm. Store tightly covered in refrigerator.
Chef Suggestions
Variation: For Fresh Pear and Nutmeg Cookies, prepare as directed above but substitute 1 cup grated fresh pear for the apple and 1/4 teaspoon ground nutmeg for the cinnamon.

It sounds lovely, and the low flour content is great.. bit of a pain with the Oats though, I cant find a gluten free oat supplier "retail" :x - apparently cereals are milled in the same factories so although Oats are tolerated by some folk, for many the contamination is too high.. As far as I know, Finland is a source of independently milled oats, I just cant find any here in the UK

I did wonder about Oat, after I posted it...I wonder if a substitute would work!!

Have you ever tried Buckwheat (again, not sure if it's actually a wheat or is gluten free)? I used to make buckwheat pancakes...OMG it has the nicest taste...but does make one F**T tremendously.....

Actually, Nickies friend has the right oats on her website, so Im going to order some and try your recipe!

Not tried using buckwheat since the diagnosis.. to be honest, given how windy HRH is anyway (seems a family trait!) I doubt buckwheat would make it any worse! :lol: sorry if thats too much info!

I am going to give those a go too.. seeing as the site is "almost" Spark(y) people ! :lol: :lol:

And I use a lot of chickpea flour for other things!
